Thomas Pico represents the new generation of vigneron in Chablis, you probably heard of Domaine Raveneau and Dauvissat, well this is the other domaine to add in your top 3 list of Chablis producers. Established in 2005, Thomas Pico is based in Courgis, he inherited 8 hectares of vines from his family. Things started to change rapidly, he immediately stopped all spraying of herbicides and begin to farm organically and biodynamically. Every grape is harvested by hand and fermentation is done in either neutral wood, concrete and/or stainless dependent on the vintage and cuvée, with some wines kept for an extended period of time on the lees.
Why do we like it?
This village Chablis is like no other, one of the very best in class! The long élevage Thomas is giving to his wines is one of the keys to understanding his style, it was bottled after 18 months of ageing, half in concrete, the other half in stainless steel. It's mouthwatering, full of lemon zest and fresh white pear along with a great tension and subtle creamy texture. A real mineral-driven wine that is captivating, such a masterpiece!
