Domaine Vacheron belongs to the elite group of producers in Sancerre, it has been completely transformed over to biodynamic farming with two young cousins, Jean-Laurent and Jean-Dominique Vacheron, at the helm. Jean-Laurent has been trained at some of Burgundy most legendary Domaines such as Domaine de la Romanée Conti and Domaine Dujac before taking over the family estate.
Therefore, the cousins have a Burgundian approach in the vineyards, yields are kept extremely low with parcels being vinified separately and blends varying from year to year.
Why do we like it?
This is simply Sauvignon Blanc at its best… it has a powerful aroma character with notes of tart citrus such as grapefruit and lemon, there is a green apple and a refreshing herbal and floral aroma too, with notes of cut grass and white flowers. The soils are of flint and chalk which add to the complexity of the wine imparting a strong sense of minerality. Try it with seasonal asparagus, a delicious vinaigrette and thanks us later!
