In 1985, Nelly and Alan Cooper established Cobaw Ridge in a natural amphitheatre at 610m of altitude, located in the cool climate of Macedon Ranges. The vision they had for the winery led them to obtain a biodynamic certification in 2011, and that's something that they are very proud of, the estate is one of just four Australian wineries to belong to Nicolas Joly’s group of biodynamic wine producers. You can sense that there is a real connection between the couple and their land when visiting the estate. Everything is done with minimal intervention and a will to preserve and promote the unique terroir where their vines grow. This is for us one of our favourite wineries in Victoria as the wines tend to show personality and authenticity, it's always an exciting time when the new vintage is being released!
Why do we like it?
Il Pinko is a very interesting wine made from Syrah, fermented and aged in qvevri (egg-shaped clay vessels designed to be buried underground) and old oak. The colour is pinkish/orange and the wine shows great nuances of pink grapefruit, pomegranate and pickled cherries along with sweet spice and floral character. It's nuanced, a touch savoury/smoky and shows a lovely chewy texture and great length. A unique and memorable rose that will offer you multiple options for wine pairings.
