2021 Christophe & Fils Petit Chablis

Domaine Christophe & Fils is based in the commune of Fyé, across the river from the town of Chablis. Surrounded by steep vineyards, Domaine Christophe started making wine in 1999 with only 0.6 hectares of vineyard. Sebastien who founded the domaine was lucky enough to have many parcels included in the appellations of Petit Chablis, Chablis and 1er Cru Chablis, but for many years those parcels were planted to cereal crops as his father was not interested in vines. His philosophy is simple, through organic treatment of his vineyards, Sebastien tries to extract the best out of his parcels terroirs. He looks for elegance, length, purity and minerality in his wines and has extremely high standards with the outcome. 

 

Why do we like it?

His Petit Chablis is all tank aged and its a breath of freshness! Lot of acacia flowers, lemon zest and green apple, the wine shows a certain weight and concentration of flavours as well. The Portlandian limestone soils in Petit Chablis provide this wine a bracing mineral tones of seashells and iodine characteristics. Do yourself a favour, grab a few bottles, and drink them with a seafood plater or with some high-quality oysters!
