Meet your Sommeliers

Dorian Guillon MS
Born in central France’s famous Loire Valley, Dorian was destined to love wine. From 2012, Dorian worked at multiple two and three Michelin starred restaurants including Dinner by Heston Blumenthal and Alain Ducasse at the Dorchester. Adventure and passion for new experiences soon found him exploring Australia and the local wine scene. Dorian attained Master Sommelier status in October 2018, soon after becoming Head Sommelier at Melbourne’s highly acclaimed Vue de monde. Dorian’s extensive experience is testament to a lifelong passion and dedication to excellence in wine service. He looks forward to sharing that passion with you.
Carlos Simoes Santos MS
Carlos’ fascination with wine began as a young boy in his family vineyard in Portugal. His thirst for knowledge and experience soon saw him move overseas where he worked at two and three Michelin starred restaurants such as Restaurant Gordon Ramsay, the opening of Dinner by Heston Blumenthal and Sur Mesure. In August 2019 while working as the Wine Director at Vue Group in Melbourne, Carlos gained the title of Master Sommelier. Carlos is currently studying to achieve the equally elusive Master of Wine qualification. His passion and knowledge are always conveyed in the most accessible, engaging way so that everyone can enjoy an informative, authentic wine experience.

NV Frederic Savart 'Bulle de Rosé' (base 2019)
$249.00
Frederic Savart is based in Ecueil, a small village located in the Montagne de Reims. He is a 3rd generation vignerons that came back at the estate in 2005, working 4 hectares of organically-farmed vineyards mostly planted with Pinot Noir with only half hectares of Chardonnay. The family business was founded by Frederic's grandfather who bought the first vineyards in 1947. Frederic spends most of his life in the vineyards, working the soil and looking after his vines. He embraces an ideal of preventing diseases and pest rather than combating them after they have hits his vineyards, encouraging a diverse ecosystem for the plant. After harvest, he does as little as possible in the cellar, the production has always remained extremely limited and Frederic is making high quality, authentic and genuine Champagne that are highly sought after.
Why do we like it?
Bulle de Rosé by Frederic Savart is a very special Champagne from this boutique producer. Coming from his Premier Cru terroir. It is an assemblage of 65% Pinot Noir and 30% Chardonnay, as well as 5% Pinot Noir vinified as red. It rests partially in wooden barrels as well as steel tanks and has a low dosage (2 g/l). It has an attractive salmon colour, touch of strawberries and roses, a bit of fresh bread and Christmas spices, one of the most refined and complex Champagne Rosé you will ever taste, to be shared with someone special!
