Meet your Sommeliers
Dorian Guillon MS
Born in central France’s famous Loire Valley, Dorian was destined to love wine. From 2012, Dorian worked at multiple two and three Michelin starred restaurants including Dinner by Heston Blumenthal and Alain Ducasse at the Dorchester. Adventure and passion for new experiences soon found him exploring Australia and the local wine scene. Dorian attained Master Sommelier status in October 2018, soon after becoming Head Sommelier at Melbourne’s highly acclaimed Vue de monde. Dorian’s extensive experience is testament to a lifelong passion and dedication to excellence in wine service. He looks forward to sharing that passion with you.
Carlos Simoes Santos MS
Carlos’ fascination with wine began as a young boy in his family vineyard in Portugal. His thirst for knowledge and experience soon saw him move overseas where he worked at two and three Michelin starred restaurants such as Restaurant Gordon Ramsay, the opening of Dinner by Heston Blumenthal and Sur Mesure. In August 2019 while working as the Wine Director at Vue Group in Melbourne, Carlos gained the title of Master Sommelier. Carlos is currently studying to achieve the equally elusive Master of Wine qualification. His passion and knowledge are always conveyed in the most accessible, engaging way so that everyone can enjoy an informative, authentic wine experience.

Maxime is the son of Alain Graillot, two of the most iconic producers in the Rhône Valley. When you drink a Graillot, you know you are drinking a Graillot! All the fruit for this wine is estate-grown, single vineyard and on the southern most-easterly part of the appellation. Soils are of gravel and alluvial, low in clay but fast draining. Vines were planted in the 1980s and are organically farmed. For years now, that we have been huge fan of these wines.
Fermentation is done naturally with small whole bunch, less indeed than what his dad was doing. 2018 was fermented in concrete vats and then racked into old Burgundy barrels, not to impart oak aromas but to micro-oxigenat the wines.
Why do we like it?
This is a very refined Syrah, with a pronounced savoury profile, on the nose a mixture of tart and ripe black fruit, a slight cured meat hint and accentuated black peppercorns notes – so characteristic from these guys. On the palate, is fine, elegant, a little spicy, with firm tannins and an incredibly long smoky finish. Flavour wise, dark berries, licorice, exotic spice and even a sense of lavender.
Region Rhone Valley
Our Wine Store is stocked with wines that we’ve enjoyed and can highly recommend along with accessories like glassware, cork holders and more. Browse our selection and discover some of our favourite winemakers from around the planet. As sommeliers, we’ve learnt to focus our attention on what’s inside the bottle, choosing wines not for a name and brand but rather for the emotion they create and the uniqueness of their provenance.
At My Sommeliers Wine Club, we also offer a range of personalised face to face experiences such as masterclasses, Women and Wine sessions, private and corporate events along with cellar management and personal shopping.
