Meet your Sommeliers

Dorian Guillon MS
Born in central France’s famous Loire Valley, Dorian was destined to love wine. From 2012, Dorian worked at multiple two and three Michelin starred restaurants including Dinner by Heston Blumenthal and Alain Ducasse at the Dorchester. Adventure and passion for new experiences soon found him exploring Australia and the local wine scene. Dorian attained Master Sommelier status in October 2018, soon after becoming Head Sommelier at Melbourne’s highly acclaimed Vue de monde. Dorian’s extensive experience is testament to a lifelong passion and dedication to excellence in wine service. He looks forward to sharing that passion with you.
Carlos Simoes Santos MS
Carlos’ fascination with wine began as a young boy in his family vineyard in Portugal. His thirst for knowledge and experience soon saw him move overseas where he worked at two and three Michelin starred restaurants such as Restaurant Gordon Ramsay, the opening of Dinner by Heston Blumenthal and Sur Mesure. In August 2019 while working as the Wine Director at Vue Group in Melbourne Carlos gained the title of Master Sommelier. Carlos is currently studying to achieve the equally elusive Master of Wine qualification. His passion and knowledge are always conveyed in the most accessible, engaging way so that everyone can enjoy an informative, authentic wine experience.

2019 Luis Seabra 'Xisto Illimitado Branco'
$47.00
After a decade as head winemaker at Niepoort in the Douro Valley, Luis launched his personal project a few years ago. He is someone with a lot of knowledge of the region and decided to explore its terroir with a different philosophy than most producers. Lui's aim is to make wines that really tell you where they come from, wine from specific vineyards with minimal intervention.
He sourced his grapes from the highest quality producers whom he knows and trusts and constantly experiments and explores new possibilities with various soil types, different altitudes, indigenous grape varieties and old vine parcels. He is one of the most exciting producers of the Douro and the wines he makes speak for themselves.
Why do we like it?
The Xisto Ilimitado Branco is a field blend of 50% Rabigato, 20% Codega, 15% Gouveio, and 10% Viosinho from vines of 30 to 60 years old, at around 500m of altitude. If you haven't heard of those varietals before, don’t worry, neither have a lot of the folks in the wine industry! The wine was fermented with natural yeast and aged for 7 months on the lees, in used French oak barrels. It's a brilliant wine, driven by minerality with a touch of nectarine, white peach and green pear. Slightly sappy, the Xisto Ilimitado Branco is graceful and powerful all at once, without ever coming across as heavy. Long and seamless across the tongue, and laced with mouth-watering wet stone that sucks you back in for more!
