Domaine Louis Michel et Fils cultivates 21 hectares of vineyards, including Premier and Grand Cru plots. As with true Chablis, the wine is unoaked and fermented in stainless steel to preserve fresh fruit purity. It ages on lees in the tank for 12 months, developing complex bready notes and a rounded texture. The result is a vibrant, lemony wine with floral aromas, green apple, and zesty citrus. The Michel family, winemakers since the 19th century, excels in crafting Chablis from their prestigious vineyards.
Why do we like it?
The Vaudesir Grand Cru is a plot found mid-slope with north west exposure. Kimmeridgian soil with heavy clay for the soil. An incredible bottle with an intense nose and great follow-through on the palate. When we talk about minerality in wine, that's the kind of wine we refer to! Very exciting stuff and super nervy.
