Dominique Cornin’s legacy began over a century ago in Chaintré, Mâconnais, with vines planted by Romain’s great-grandfather. Certified organic in 2009, biodynamic since 2003, Dominique and son Romain craft pure wines from 10 hectares. Their bond with the land feels like family to me—I’d love to hear their tales over a glass, surrounded by those ancient vines.
Why do we like it?
From old Chardonnay vines on clay-limestone, the 2021 Les Plessys ferments 50% in demi-muids, 50% in barrels for 12 months, then rests unfiltered. It’s rich yet racy—honey, pear, and white flowers bloom, with a saline finish. I’d sip it and feel its vibrant soul, like a crisp French breeze.
