Dominique Hauvette is a discrete winemaker whose work is simply remarkable. Located near Saint-Remy-de-Provence (a tourist town known for Roman ruins and as the place where Van Gogh painted “The Starry Night”), she founded the Domaine in 1988 with two hectares and a broken-down winery. Attracted by the living condition of Provence, she decided to leave her job as a lawyer in Savoie and began studying oenology. Like in most fields, it is important to find great mentors to achieve greatness, early on in her career, she worked for the legendary Eloi Durrback of Domaine Trevallon and Laurent Vaille of Domaine de la Grange des Peres! Like them, Hauvette produces destemmed, long macerated, and long-aged reds and whites of incredible finesse. Over 35 years later and Dominique now has 17 hectares of vines and an international reputation for making some of Provence finesse wines. She has been farming biodynamically since early 2000’s and was one of the first adopter of using concrete eggs for vinifying and aging wines.
Why do we like it?
It is simply a superb wine that perfectly expresses the typical characteristics of its appellation. This wine displays Mediterranean notes of wild blackberry and strawberry, black olive, dried thyme and mint. It is extremely satisfying as it shows an incredible freshness, elegance and fine grained tannins along with a deliciously long finish. Decant for one hour before serving.
