Simon Bize is a longstanding insider gem, it has now gained broader recognition for its remarkable value and extensive aging potential across its diverse vineyard plots. Established in 1868 in Savigny-lès-Beaune, this family-run estate flourished under the stewardship of Patrick Bize in the 1970s. Sadly, during the harvest of 2013, Patrick unexpectedly passed away, at age 60. The future of this estate was somewhat unknown, but his wife, Chisa Bize, came out of the shadow and became the new face of the Domaine. Little did people know that she has long been quietly involved with Patrick along the way, encouraging him in the direction of organic and biodynamic farming, principles that have been quietly applied to the estate for years.
While a limited number of their vineyards operate under full biodynamic practices, Chisa ensures that the domaine remains committed to traditional and hands-off techniques. For their red wines, this involves foot-treading whole or partially whole clusters to avoid aggressive extraction and minimal use of new oak during barrel aging. Each cuvée is meticulously assembled in stainless steel vats before bottling, with no fining or filtration. This approach results in opulent, substantial wines reminiscent of robust, old-school Savigny-lès-Beaune which we love so much!
Why do we like it?
Aux Grands Liards is a 1.6 ha lieu-dit that is immediately underneath the premiers crus on the left bank of Savigny. Old vines that were planted in 1939, 1950 , and 1979. Heady, and concentrated, with cherry and blueberry dominating the nose, it is also slightly peppery and earthy. It’s a wine of great density with a beautiful poise and fine grain tannins, that can certainly age another 10 years plus.
