2021 Pato Wouters ‘Nossa Calcario’ Bical Branco, Bairrada, Portugal

The Pato family, isn’t a very long history, but is certainly a good one. João Pato started the winery in 1970 becoming one of the first in the region after its demarcation. His son Luis Pato took over from the 1980s… But we are here not to talk about the old generation. We are here to talk about Filipa Pato and her husband William Wouters! The ‘crazy’ third generation.

As they like to call it, wines without make up, authentic. They express the true nature of the vineyards from which they come from, focusing on indigenous grapes only. Baga, Bical, Arinto, Cercial and Maria Gomes create soulful wines in micro-climates and aspects ideal for growing exquisite wine grapes with biodymanic viticultural practices.

The wine was aged for 8 months in 500 litre barrels. Grapes were handpicked from a single vineyard. Long pressing of full bunches. The juice is free runned into the casks, fermentation with wild yeast in an old traditional cellar with a naturally constant temperature under 20°. No batonnage is done to preserve freshness.

Why do we like it?

This wine drinks a little bit like a Chablis… refreshing, high in acidity, with green apple, pear and lemon notes. Serve at about 12 degrees in nice Chardonnay glasses. Can keep for another 5 years or enjoy today.
