Bondar is a small family winery based in Clarendon, in the cooler hills of the McLaren Vale region in South Australia. Run by Andre and Kate Bondar, the estate is focused on capturing the elegant, fresher side of McLaren Vale fruit — a deliberate counterpoint to the bigger, riper style the region is often known for.
Why do we like it?
Hope Springs Eternal is Bondar's expressive, site-driven Clarendon Shiraz — dark berry and plum fruit, a lift of violets and pepper, and a savoury, structured palate that reflects the cooler altitude of the Clarendon sub-region. It's a Shiraz with real freshness and energy, made by a producer determined to show a different, more refined face of McLaren Vale.
