For Franz, the journey of agricultural and vinous discovery is ongoing, a cultural and personal exploration he deeply values.Despite his evolving methods, two core principles remain strong. Since taking over the family estate in the late 1990s, Franz has passionately championed indigenous grape varieties of Austria and Hungary. He sees this as a way to honour local heritage while forging a meaningful connection between the past and the future. Additionally, in the face of climate change, Franz firmly believes that the solution lies in sustainable farming practices. By focusing on the land and its stewardship, he continues to shape a resilient and forward-thinking vision for winemaking.
Why do we like it?
‘Ponzichter’ is the colloquial term for the German-speaking grape-growing minority in Sopron, meaning ‘bean grower’, as they traditionally planted vegetables between the vineyard rows. The grapes: Pinot Noir and Zweigelt, are cultivated on loam and gneiss soils in both Austria and Hungary. Fermentation takes place in open-top vats, using a combination of crushed grapes and whole berries. The wine then ages for 18 months in 40-year-old casks before being bottled unfined and unfiltered, with very little sulphur. Expect lots of freshness, fresh cherry and bluebbery notes, along with an ethereal earthiness and succulent dry floral character.
